Born and bred in Roscrea, County Tipperary, Mark is pleased to bring a small piece of Ireland to the heart of Washington, DC. Before opening Kirwan’s, Mark worked in the equine industry in Ireland and the U.S. and with Guinness Brewery for nine years in quality control, special events and business development. Mark, an avid rugby player and coach, also owns Samuel Beckett’s, a gastropub in Arlington.
Rossa is the General Manager of Kirwan’s, from Mitchelstown, County Cork, whose interest was piqued by the U.S. due to the country’s big influence on Ireland. He has more than 20 years of experience in the hospitality industry, including seven years managing Samuel Beckett’s Gastropub in Arlington. Rossa’s favorite meal from his homeland is his mothers Shepherd’s Pie and Green Spot Irish Whiskey.
Chef Declan Horgan
Declan, a Dubliner, was 20 when he ran his first 1 star Michelin restaurant for Conrad Gallagher. Afterwards, he was invited to cook at another, La Grande Cascade, in Paris. Later, he worked alongside Ireland’s renowned chef, Dylan McGrath.
Declan’s rustic style embodies what he calls “blue jean cuisine”: everyone feels welcome, no one leaves hungry. Declan’s favorite tastes of home are the perfect pint of Guinness, and his house-made bangers, which are the closest to an Irish sausage you’ll find this side of the Atlantic.
Danni is a manager of Kirwan’s from County Wicklow who has always admired the U.S.’s high standards in the hospitality industry. Since starting at Kirwan’s, Danni “couldn’t imagine doing anything else, anywhere else.” Her favorite Irish drink is Club Orange, a soda, and she says nothing beats Irish mashed potato and gravy.
Adam is a manager of Kirwan’s from County Wicklow. He started in hospitality at age 15, landed his first managerial job at 18, and considers his role on Kirwan’s amazing team as his biggest career highlight. Adam eats enough of Kirwan’s chicken pot pies to risk turning into one, and his true love is Green Spot Irish Whiskey. Adam is now the General Manager of Samuel Beckett's Irish Pub in Arlington.
Michael is bartender of Kirwan’s from County Mayo. His career has taken him to jobs in London, Spain and throughout Ireland. He considers coming to the States to experience the Irish bar scene as the best decision of his life. Michael’s favorite Irish tastes are a “Pint of Plain” (that’s Guinness, for the non-Irish) and traditional bacon and cabbage.
Antonio Michael Peoples
Mike is a server at Kirwan’s who has lived in DC all his life. He began his career in the food industry at 15 and has held numerous jobs front- and back-of-house. Before Kirwan’s, Mike had never set foot inside an Irish pub. Now that he has, he’s loving the experience as well as the fish n’chips.
David is a manager of Kirwan’s originally from Glasgow Scotland. He started his career in America working in Samuel Beckett’s Irish Pub in Shirlington and moved over to Kirwan’s .
Sydney is a server at Kirwan’s who grew up in Northern Virginia and is originally from Vietnam. With a long background in the customer service industry, she considers the Kirwan’s team more like a second family than just co-workers. As for a favorite Irish drink, she goes for a pint of Magners with a Yellow Spot Whiskey, neat.
